The room

A room built around one obsession.

We took a corner unit on Ashworth Lane, stripped it back to brick, and pointed every lamp at the bar. Nothing hangs on the walls that isn’t about the cup.

Green beans land on Tuesday. They are roasted Wednesday, rested four days, and pulled no sooner than Sunday. Never before the sugars have settled.

The craft

Ninety hours, start to cup.

None of this can be hurried, and we have stopped trying. The green beans land on a Tuesday. The first cup is not poured until Sunday.

    Ninety hours from green bean to finished cup. There is no faster way that is also a better way.

    Drum-roasted in twelve-kilo batches, profiled by ear and by nose, stopped on the second crack.

    Served beautifully.

    Poured into warmed porcelain. Never paper, never in a hurry, never to anyone standing up.
